Authentic Panang Curry Recipe

This meal can be served for two people and in some cases even for three.

Panang Curry Sauce

Ingredients:

5 sliced shallots

5 dried red chilly peppers (soaked)

1 teaspoon fresh and sliced lemongrass

1 teaspoon sliced cilantro

1 teaspoon sliced galangal

1 clove crushed garlic

1 teaspoon coriander

12 sliced leaves Kaffir lime

1 teaspoon cumin

1 tablespoon shrimp paste (optional)

1/4 cup peanuts (optional)

1 teaspoon salt

2 teaspoon white pepper

Making Panang curry sauce:

To prepare the Panang curry sauce, basically just blend all of the substances and mix them thoroughly. It’s also possible to mix everything in a blender if you prefer.

The ingredients for the rest of the Panang curry recipe are the following:

400g chicken (can be also fish, seafood, pork or beef)

2 cans coconut milk

2 cups rice

Panang curry sauce

3 tablespoon brown sugar

4-6 leaves kaffir lime

1/2 cup peas

2 tablespoon fish sauce

Cooking Panang Curry

Rice – cooking the rice is quite easy. If you wish a fast and simple approach to cook rice, just put together two cups of rice, four cups of drinking water, one teaspoon of salt and two teaspoon of butter in a microwave safe box. Put it in the microwave on high for a few minutes, and after that on medium for a quarter an hour. Remember that the actual time before the rice is ready depends on the servings. When using less or more rice than in our Panang curry recipe, the cooking time needs to be adjusted. In case you are uncertain of the proportions, basically do 2 or more rounds as needed. Ingredients:

500g chicken breasts

1 cup chicken stock

2 tablespoons red curry paste

2 cups coconut milk

2 tablespoons fish sauce

2 tablespoons finely chopped peanuts

2 tablespoons brown sugar

1/2 cup basil leaves

1 tablespoon vegetable oil

4 chopped kaffir lime leaves

2 small red chillies, sliced

basmati rice

Cooking Process:

Curry paste – place chopped peanuts and red curry paste in a bowl and mix well. Heat up the frying pan over medium heat. Take the top thick layer of coconut milk and put it into the pan. If your coconut milk doesn’t have the thick top, just use a vegetable oil. Then cook while continuously stirring for a few minutes and include the blended curry paste. Cook for about two minutes. Mix in fish sauce and brown sugar and cook for another five minutes until the mixture thickens. Slowly include chicken stock and the rest of coconut cream. Let the meal cook for 20 minutes.

Chicken breasts – while the curry is being cooked, heat up a grill or another frying pan on high temperature. Place chicken breasts on the grill or in the pan and fry for 2-4 minutes on each side. When the meat is done, Remove it from the heat and place it aside. Then cut the chicken into small pieces.

Panang curry – finally, add chicken basil leaves and kaffir into curry paste and mix thoroughly. Pour Penang curry over the rice or make rice bowls as described in first recipe. Additionally, you can top the dish with chopped chillies and the meal is ready to be served.

These quick and easy chicken recipes with curry are fast and simple to prepare. It can be cooked in just 15 minutes and is great when you’re in a rush. Try our super easy yet tasty chicken curry recipe and prepare a delightful meal for everyone to enjoy.

Ingredients for the Quick and Easy Chicken Recipes:

     400 g chicken breasts

     45 ml extra virgin olive oil

     2 cloves of garlic

     1 yellow onion

     1 teaspoon curry paste

     30 ml cream

     ¼  teaspoon salt

     ¼  teaspoon coriander

     ½  teaspoon cumin

     1 teaspoon tomato sauce

     1 green chilli

Tools:

     Cutting board

     Tablespoon

     Teaspoon

     Knife

     Frying pan

     Wooden or plastic spoon

Portions:

     2

Cooking Time:

Ten minutes

Preparation before cooking:

Carefully cut an onion into small pieces.

Note:  Make sure to cut the ingredients into small pieces. The smaller they will be chopped, the quicker they will be cooked. So if all ingredients are chopped into very small pieces, they will be cooked very fast and that is what we want.

Carefully cut a green chilli into very small pieces. Remember to take out the seeds if possible, unless you wish to have a very spicy chicken curry, Do not forget to thoroughly clean your hands after slicing the chilli, as its juices can be very aggressive to your skin.

Finely chop 2 gloves of garlic.

Place the chicken breasts on a cutting board. Slice into modest pieces that will be easy to eat. Clean your hands after cutting up the chicken.

    

Cooking Process:

1. Cook the onion

Heat a frying pan on the moderate temperature. Include three tbsps of olive oil. After the oil is heated, put the sliced onion into the frying pan and cook for about one minute.

2. Add sliced chicken breasts

Add the chicken in and carry on cooking for five to six minutes. After few minutes the meat will begin to cook, and get completely white on the outside.

3. Add chopped chilli and garlic

Add the chilli and garlic into the mixture and stir fry. Keep on frying slowly on the medium temperature, until finally all things turn brownish. It will take around two to three minutes while continuously stirring.

4. Include the spices

Add 1/4 tsp of ground coriander, 1/2 tsp of ground cumin, 1/4 tsp of salt in the mixture and stir properly.

5. Include some more ingredients

Put curry paste or 2 tsp of curry powder, 1 tsp of tomato sauce into the mixture. If you like, you can substitute curry paste with garam masala. Additionally, put two or three tablespoons of cream into the pan and stir well.

When you are not sure if the meat is properly cooked, try a larger piece from the mixture. It must separate easily when sliced in half and be cooked completely all the way without being pink in the middle.

Suffed Chicken Breast in Curry Sauce with Vegetable

 Ingredients for chicken breast:

4 boneless, skinless chicken breasts

2 tablespoons of oil

2 teaspoons of garlic powder

2 mugs of all-purpose flour

2 teaspoons of onion powder

1 mug of walnuts

3/4 mug of dates

1 mug of red grapes

2 mugs of bread crumbs

5 eggs, gently mixed

2 teaspoons of kosher salt

Ingredients for cauliflower and potatoes:

3 red potatoes, chopped into cubes

1 big cauliflower, separated into small pieces

2 tablespoons of olive oil

Freshly ground black pepper

1/4 mug of raisins

1/4 mug of chopped fresh chervil leaves

Salt

Ingredients for curry sauce:

2 tablespoons of curry powder

1/4 mug of chopped yellow onion

2 tablespoons of flour

2 tablespoons of butter

2 mugs of chicken stock

How to prepare chicken breasts:

Put the dates, grapes and walnuts into the food mixer and mix until they are smooth.

Place the chicken breasts in between 2 sheets of plastic wrap and pound the chicken until consistently flat and thin with a meat tenderizer. Then take away the plastic wrap. Sprinkle the meat with pepper and salt. Split the mixture between the chicken breasts, putting about 2 tablespoon of the mixture on top of  each bit. Roll up the chicken around the filling while using the wrap as your guide,

Place the eggs, flour and bread crumbs in a bowl. Add little bit of salt, onion powder and garlic powder in the bread crumbs. Dip the rolled chicken breasts into the flour, making sure they are completely covered, then into the egg and lastly into the bread crumbs. Rolls needs to be covered entirely during every stage in the  coating process.

Put 2 tablespoons of oil in a large pan and heat on high temperature. Turn the chicken rolls every couple of minutes to make sure they are evenly fried on each side until they have golden color. Then put the pan into the oven and leave it there for about 15 minutes until they are cooked properly.

Cauliflower and potatoes:

The oven should be pre-heated to 350 degrees F.

Place olive oil, potatoes, cauliflower, raisings, chervil, pepper and salt on large baking tray. Arrange all in one layer and bake for about 25 minutes until the potatoes are tender. Then take the potatoes and place them into a plate.

Curry sauce:

Melt the butter in a frying pan over medium temperature, then add the curry and onion. Fry for 2 minutes, sprinkle with the flour and fry another minute. Pour in the chicken stock and slowly bring to a simmer. Wait until the gravy is even and thickened.

2. Chicken Curry Recipe:

Stuffed Chicken Breast With Green Curry

Ingredients for curry sauce:

50 ml Chicken Stock

1 tablespoon of Green Curry Paste

2-3 tablespoons of Oil

200 ml Coconut Cream

1 teaspoon of Sugar

1 tablespoon of Fish Sauce

Remaining ingredients:

150g Chicken Breast

1 Big Red Pepper

1 teaspoon of Sugar

1 teaspoon of Fish Sauce

1 teaspoon of Oyster Sauce

30ml Coconut Cream

1 Kafir Lime Leaf, chopped into very small pieces

1 tablespoon of Coriander, chopped into very small pieces

Cooking process:

Mix the coconut cream, chicken, sugar, fish sauce, chopped kafir-lime leaf and coriander.

Stuff the mixed filling into a pepper and steam for about 25 minutes.

Pre-heat oil in frying pan on medium temperature and add green curry. Fry for 2-3 minutes.

Additionally add chicken stock, fish sauce, sugar, coconut cream and cook for about 5 minutes.

Top green curry sauce on stuffed red pepper and sprinkle over with chopped kafir-lime leaves.

3. Chicken Curry Recipe:

Roasted Stuffed Chicken Breast with Curry Sauce

 Ingredients:

4 chicken breasts

1 teaspoon of chopped fresh ginger root

700g chopped tomatoes

100g baby spinach leaves

300g grated paneer

150g sliced yellow onion

6 crushed garlic cloves

100g chopped red onion

60ml cream

1½ teaspoon chopped green chilli

50g butter

2 tablespoons of honey

4 tablespoons of Tikka Masala Curry Paste

quarter teaspoon of black pepper

salt

5 saffron threads

75g grounded pistachio nuts

100g roasted and crushed cashew nuts

4 tablespoons of vegetable oil

Chicken breasts:

Place the chicken breast flat on the chopping board, cut it flat half way through. Then open out and tender using a meat mallet.  Put them aside.

Heat 1 tablespoon of oil in a frying pan and add the chopped red onions.  Fry for 3 – 4 minutes prior to mixing in the 2 tablespoons of Tikka Masala Curry Paste. Stir for 2-3 more minutes then take it away from the stove. Let it cool a bit. Then add a half teaspoon of chopped green chilli, grounded pistachio nuts, a half teaspoon of ginger, black pepper, spinach and grated paneer.

Stuff the meat by adding some of the filling in the center of one of the chicken breast. Then cover it with the second half of the breast while making sure the mixture is closed.

Pre-heat the frying pan on high temperature with 1 tablespoon of oil. Add the stuffed chicken breasts and fry until the rolls start to be evenly brown. Put on a baking sheet and bake in a pre-heated oven at  350°F / 180°C for 15-20 minutes.

Curry sauce:

This part is what makes this chicken curry recipe to stand out above other stuffed curry recipes! To begin with the sauce preparation heat 2 tablespoons of oil in the frying pan. Add the 150g sliced up yellow onion, remaining chopped green chilli, all of the crushed garlic, and the rest of ginger. Cook for five minutes and after that add two tablespoons of Tikka Masala Curry Paste. Cook for a few more minutes while adding a bit of water in the case the mixture starts to stick.

In addition mix in butter and tomatoes and let it simmer on a medium temperature for about 10 minutes. Add roasted crushed cashew nuts and the saffron threads and allow the gravy simmer for about 30 minutes. Then let it cool a bit.

After the gravy has cooked properly, strain by using a sieve and mix into a smooth consistency. Heat up again on medium temperature for 10 minutes prior to adding in the cream and honey. Add salt and seasoning to your taste.

When the stuffed chicken breasts are cooked properly, place them on serving plates and drizzle with the curry gravy.
